Trying something new…vegetarian steak tips stir fried with veggies in a brown sugar and soy sauce glaze with a pinch of ginger and a splash of sriracha sauce. Sweet, hot, spicy, and yummy!

I’m excited about spring and nothing communicates my moods better than food. I’m gradually shifting from heavy-winter-comfort-food to light-fresh-healthy meals. This dish was heavy on the veggies and light on the noodles. Light cream, a dab of tomato paste, and veggie stock from the sautéed mushrooms made a light earthy flavored sauce. Plenty of fresh and dried herbs finished it off. Delizioso!

Loaded with veggies – cabbage, leeks, carrots, and portobello mushrooms. A great winter meal.

My version of the peasant Italian dish, pane cotto (cooked bread). I added sweet red peppers and got the Italian flag. 😉 With gluten-free bread, this turned out light but just as yummy and filling as the traditional way made with crusty bread. Yes, I’ve had to give up gluten, but I refuse to give up my Italian comfort food!

Not just an ordinary cream of mushroom soup.
Mushrooms – yes, cauliflower – check. A handful of quinoa adds a good punch of protein and turns this vegetarian soup into a hearty winter meal. Seasoned with nutmeg, dried thyme and rosemary, and plenty of fresh parsley. YUM!

Feta cheese, cottage cheese, and a handful of chopped fresh parsley give this quiche a unique flavor – and color!

Sunday is for pasta and lasagna is my favorite. Gluten free noodles make it light enough for seconds…maybe thirds!

Black beans stir-fried with Mexican spices, fresh herbs, hot chili oil, veggies, and avocado. Vegan, gluten-free, delicious!

Dropping the carbs and stirring up the chickpeas. Plenty of veggies, sundried tomatoes, and extra virgin olive oil. Delish!
