In the Garden of…

Here we are heading into the summer of 2017 and I’m giving the gardening thing another shot. No green thumb, just wishful thinking along with lots of TLC.

My basil plant is already struggling to survive most likely from planting too soon. In Massachusetts it seems winter likes to hang around until June. But I’m determined to make this work! I can’t wait for veggie summer dishes with fresh herbs and hoping for the best in my tiny garden of herbs and pretty flowers scattered throughout.

What to prepare with hot and spicy oregano? The possibilities!

Pasta Primavera

I’m excited about spring and nothing communicates my moods better than food. I’m gradually shifting from heavy-winter-comfort-food to light-fresh-healthy meals. This dish was heavy on the veggies and light on the noodles. Light cream, a dab of tomato paste, and veggie stock from the sautéed mushrooms made a light earthy flavored sauce. Plenty of fresh and dried herbs finished it off. Delizioso!
